Our chefs here at Bottiglia Cucina & Enoteca are always striving to include healthy options into our dinner and brunch menus so our guests who are of a more health-conscious view are still able to enjoy their favorite restaurant in Henderson located at the Green Valley Ranch.
Sunday Brunch has become a staple at Bottiglia. It’s a place to see and be seen in the Green Valley area, and with a chic and floral atmosphere, Bottiglia is the go-to spot for cute ‘instagrammable’ moments. Yet, so many brunch restaurants only offer incredibly hearty or greasy selections, but not at Bottiglia. Our brunch menu is full of lighter and health-conscious options. Guests favorites include our Avocado Toast, served on rustic bread with roasted tomatoes and basil pesto, or the California Eggs Benedict, which substitutes the carbs for a roasted tomato base. Chef Anthony Ramirez is always one to recommend the Grilled Salmon for brunch. It is sustainably-farmed from Alaska and served over a bed of Bottiglia’s famous quinoa salad, with a light lemon herb vinaigrette. And honestly, could a mimosa or 2 be unhealthy?
A good Italian dinner truthfully is more difficult to make healthy. So many cheeses and carbs make their way into so many classic recipes, but here at Bottiglia, our chefs have managed to find a balance between delicious flavor and healthy ingredients into many of our menu items. Our robust selection of salads includes a Vegan Tomato Salad or a fantastic Beet Salad with gorgonzola cheese and prosciutto to start off. Other health-conscious starters include a flavourful Tuna Tartare mixed with Calabrian chiles and fennel or fresh seafood selection such as fresh-shucked oysters and shrimp cocktail.
For the main course, Chef Anthony recommends more seafood options like the wild caught Chilean Seabass. If the farro risotto is too heavy for you, it can be substituted for a lighter option like the quinoa salad. Pasta is not forgotten here! Try our signature Zucchini Pesto Sagna A Pezzi, which is a vegan dish packed full of roasted eggplant, sun-dried tomatoes, and Marcona almonds. If you’re looking for a classic red-sauce pasta dish, look no further than our Rigatoni and Cherry Tomato for a healthy option. Many of our wines are also sustainably farmed with no added sulfites. Look for selections like the Stemmari Nero d’Avola next time you dine.
